After having this Mad Green’s salad one day for work, I felt inspired to try to re-create this at home. This salad is fresh, clean, and light.

Ingredients

Directions

  1. Cook the quinoa according to package directions.

  2. Cook the chicken breast and set aside.

  3. Add the quinoa, chicken, and salad ingredients to a bowl or meal prep containers.

  4. Pour the salad dressing on immediately prior to eating.

Tips

If making for lunch, I suggest keeping the dressing and salad separate until ready to eat, as with most pre-packed salads.
