Easy Chicken Salad Meal Prep

Chicken Salad in Four Meal Prep Containers

I make a version of this salad pretty much on a weekly basis because it is easy, customizable, and healthy. It features my easy air fryer chicken and lots of fresh vegetables. You’ll get lunch for Monday-Thursday while saving on calories and money.

Ingredients

  • 1 package fresh chicken breasts or tenderloins

  • 1 package mixed butter lettuce

  • 1/4 red onion diced

  • 1/2 green pepper

  • 1/4-1/2 container of grape or cherry tomatoes

  • 1/4-1/3 cup feta cheese

  • 1/4 cup pepitas

  • Primal Kitchen of Balsamic Vinaigrette or homemade

Directions

  1. Air fry the chicken at 400 F for 13 minutes. Detailed steps below:

    Preheat the air fryer at 400 Fahrenheit / 205 Degree Celsius.

    Dice the chicken into ~1 inch cubes.

    Toss in a bowl with ~2 Tbsp olive oil, garlic powder, onion powder, Mrs. Dash herb seasoning, salt, smoked paprika.

  2. Place 4 meal prep containers on the counter.

  3. Place the lettuce into the meal prep containers.

  4. Chop the green pepper, onion, and tomatoes, and distribute across the containers.

  5. Sprinkle the feta cheese and pepitas on top.

  6. When the chicken is done, let rest for ~5 minutes and let cool. Then distribute across the containers.

Tips

I bring the whole bottle of dressing with me to work to save time on packing it separately and carrying it.

If you want to add a carb source, I think adding quinoa would be delicious and add even more fiber.
